White Chocolate Pumpkin Cheesecake
You may know that I have a precarious relationship with pumpkin. I grew up “liking” pumpkin pie but really only wanted it maybe once or twice a year – anything beyond that was yuck!
Lately I’ve come to grips with the fact that I just don’t actually like pumpkin pie all that much.
BUT I still want to eat some sort of pumpkin dish for Thanksgiving (and Christmas, and maybe sometime in November.
Pumpkin is the flavour of fall and the holidays. I can’t get through them and not have pumpkin – it’s a crime!
Since it’s so easy to puree up some pumpkin, I try to always have a stash in my fridge and/or freezer, which means I just need to grab the cheesecake ingredients and I’m ready to go!
